Got Eggs?

Early last Fall we aquired 14 chickens. It has was fun enjoying great farm-fresh, brown, white and even green eggs. As the Fall and then Winter came upon us the chickens slowed down in their production. We were wondering if time and $ spent on supplies was worth the 2-3 eggs we were getting a week. But then something great happened. Cleaning out the coop on a more regular basis and the Spring weather made the chickens kick it into gear! Instead of getting 10 eggs every 2-3 weeks, we are getting 10 eggs a day! Anyone have any great egg recipes? We have almost exhausted scrambled, fried, hard boiled, and poached. It has been a great experience for Audrey (in charge of the chickens) to learn how to take care of them and see the fruits of her labor. We will be sad to say goodbye to the chickens (Audrey has named them all) when we move. They will be going to a neighbor. We hope to get some chicks when we get to Seattle so we can keep playing Old MacDonald.

I love a good hashbrown/egg/ham casserole type thing - but I dont have a great recipe.

We had chickens when I was a little girl and it was my job to feed them and collect the eggs. I just barely remember it - but there are some great pics of me in Sunday dress and boots on my way to the coop.

that's so cool. chickens, how fun! way to go audrey taking care of them all. i love eggs. roger makes a mean omelet that i could eat at any time of the day. i also love a breakfast casserole that would use only one day's worth of eggs! i'll send it to you...
